An Art de Vivre founded on time, generosity and authenticity


The finest delicacies are often the result of years of patience and authentic details that suffer no compromise. For example, it can take up to 50 years of maturation and evaporation in a series of oak, cherry, chestnut, wild cherry and finally ash barrels to produce just a few teaspoonfuls of balsamic vinegar from the must of Trebbiano grapes. The essences of the different woods are what give this extraordinary liquid its characteristic flavour, a process that took several centuries to master and perfect.
Similarly it takes between 24 and 48 months for Parmesan cheese to reach maturity, after of course having taken the time to meticulously collect the milk from cows that graze on the grass and hay of the meadows of Emilia Romagna without which the cheese would not have its inimitable flavour. Once again, it took centuries to develop this cottage industry craft that has never been formalised but which is nonetheless incredibly refined and sophisticated, requiring in particular that one of the two milkings from which the cheese is made, the evening one, be left to rest over night in shallow tanks.

Parmesan and balsamic vinegar may well be the best ambassadors of Italy's distinctive art de vivre. However nowhere else in the world than in their home region of Emilia Romagna, do they have such a distinctive flavour. This is perhaps due to the region's particularly mild sunlight that bathes the ancient stones of its houses, to its sweet-natured inhabitants and their musical language or to the amazingly simple way everything becomes beautiful and harmonious. While it might be impossible to explain this mystery, it can certainly be felt and nowhere better than in the region's distinctive flair for life and authentic pleasures.
